You’ll need– 1 whole wheat flatbread, 2 cups low-fat mozzarella cheese, 1 Tbsp. oregano, 1 tsp. garlic salt, fresh basil leaves, 1/2 cup sliced tomato, olive oil and salt and pepper to taste.
Directions– Your first task is to preheat the oven to 350 degrees. Place the flatbread on an oven pan and, use a small brush to coat the area with a light layer of olive oil. Sprinkle oregano, garlic salt, and salt and pepper over the olive oil, then top with mozzarella, tomato and basil. Put the flatbread in the oven for about 15 to 20 minutes, or until cheese is slightly golden.
Rosemary for Oven-roasted Potatoes– This is a side dish which is best paired with an oven-baked or grill-fired chicken breast.
You’ll need– 5 large potatoes, peeled, 2 Tbsp. olive oil, 1 clove garlic, minced, 4 sprigs fresh rosemary.
Directions- Again, your first task is to preheat the oven to 350 degrees. Peel the potatoes and cut them in small pieces and place them in a large water-filled pot. Bring the potatoes to a boil, then allow them to sit in the boiling water for just five minutes. Drain the water after removing the vegetables. Add olive oil, garlic, rosemary after putting the potatoes in a gallon-sized plastic bag. Close the bag and mix the ingredients with your hands. Open the bag and place its contents on an oven tray. Allow the potatoes to bake for 40-60 minutes, until they are soft.
